Honey-Glazed Salmon with Roasted Vegetables

Honey-Glazed Salmon with Roasted Vegetables

Ingredients:

4 salmon fillets

2 Katie's Baebee's Drip Styx infused honey sticks

2 tablespoons soy sauce

2 tablespoons olive oil

1 tablespoon fresh lemon juice

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper to taste

2 cups baby carrots

2 cups Brussels sprouts, halved

1 red bell pepper, sliced

1 red onion, cut into wedges

 

Instructions:

Preheat Oven: Preheat your oven to 400°F (200°C).

Prepare Marinade: In a small bowl, mix together the contents of 2 Katie's Baebee's Drip Styx infused honey sticks, soy sauce, olive oil, lemon juice, minced garlic, and grated ginger.

Marinate Salmon: Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.

Prepare Vegetables: On a baking sheet, arrange baby carrots, Brussels sprouts, red bell pepper slices, and red onion wedges. Drizzle with olive oil, and season with salt and pepper. Toss to coat.

Roast Vegetables: Place the vegetables in the preheated oven and roast for 15-20 minutes, or until they are tender and slightly caramelized.

Cook Salmon: While the vegetables are roasting, heat a large skillet over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side, or until they are cooked through and have a nice glaze.

Serve: Serve the honey-glazed salmon with the roasted vegetables on the side. Garnish with fresh herbs if desired.
