Blueberry Honey Scones

Imagine buttery scones bursting with juicy blueberries, each bite sweetened to perfection with the rich, nuanced flavors of our signature honey. This isn’t just a treat; it’s an experience crafted from the heart of nature to your table, combining homemade warmth with a hint of luxury. Let each bite transport you to a moment of pure bliss. 
 

Ingredients :

  • 4 ounces blueberries – fresh or frozen 
  • 2 tablespoons Katie’s BaeBees Drip Styx Infused Honey (6 straws)
  • 2 tablespoons Katie’s BaeBees raw honey
  • 1/2 cup heavy cream 
  • 8 tablespoons cold unsalted butter 
  • 2 cups All Purpose Flour 
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg chilled
  • 1 teaspoon vanilla extract

Directions :

  • Preheat even to 350 ° F. in a large bowl add the flour, baking powder and salt. Use a whisk or large spoon to mix the ingredients together
  • In another small bowl, add the egg, all honey, vanilla and heavy cream. Use a whisk-or fork to blend them together well.
  • Add the cold butter (cubed) to the flour mixture, Use a pastry blender to incorporate the butter into the dough.
  • Pour the egg mixture over the dry ingredients in the bowl, Add blueberries too. Gently mix the ingredients together until all of the dry flour is incorporated.
  • Use a large spoon to scoop dough onto a greased baking sheet (or one lined with parchment paper).  Gently push the dough down until it is about 1 inch thick (About 9 scones)
  • Use a pastry brush to lightly coat the top of each scone with a bit of heavy cream. Bake in the oven for 30 minutes or until lightly brown on the surface and an inserted toothpick comes out clean.
  • Add a light honey drizzle when they come out of the oven if you plan to eat them right away.
