Infused Gingerbread Cookies

Posted on December 17, 2023 by James Bridges

Ingredients:

• 3 cups all-purpose flour

• 1 1/2 teaspoons baking powder

• 3/4 teaspoon baking soda

• 1/4 teaspoon salt

• 1 tablespoon ground ginger

• 1 1/2 teaspoons ground cinnamon

• 1/2 teaspoon ground cloves

• 1/2 cup cannabutter (THC-infused butter)

• 1/2 cup regular unsalted butter

• 1 cup brown sugar, packed

• 1/2 cup molasses

• 1 large egg

Instructions:

1. Preheat your oven to 350°F (175°C).

2. In a bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, and cloves.

3. In another bowl, cream together the cannabutter, regular butter, and brown sugar until smooth. Add the molasses and egg, mixing well.

4. Gradually add the dry ingredients to the wet ingredients, mixing until combined. The dough should be firm.

5. Divide the dough in half and wrap each portion in plastic wrap. Chill in the refrigerator for at least 1 hour.

6. Roll out the chilled dough on a floured surface to about 1/4 inch thickness. Use gingerbread cookie cutters to cut out shapes.

7. Place the cut-out cookies on a parchment-lined baking sheet and bake for 8-10 minutes, or until the edges are lightly browned.

8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Remember to calculate the THC dosage per cookie based on the potency of your cannabutter, and be cautious about consumption to avoid overindulgence.
