Spicy Roasted Sweet Potatoes

Ingredients

  • 1-3 lg Sweet Potatoes peeled and cubed
  • 2-3 Tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1/4 tsp Onion Powder
  • 1/2 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/4 tsp Cayenne Pepper optional

Instructions

  • Place the sweet potato cubes on a large baking sheet. Drizzle the olive oil over them, and then use your hands to mix them into the olive oil, and coat all of them.
  • Mix up the spices and sprinkle over the potatoes. Mix them and coat with the spices.
  • Spread the potatoes out in a single layer on the baking sheet.
  • Bake at 425° for 25 to 35 minutes, or until the potatoes are temder when pierced with a fork. They should be a little crisp on the outside.
  • Serve immediately.

Ingredients

1 (9 inch) unbaked pie crust

1 (16 ounce) can pumpkin puree

1 (14 ounce) can sweetened condensed milk

2 large eggs

1 teaspoon pumpkin pie spice

Directions

  1. Gather all ingredients.

  2. Preheat the oven to 425 degrees F (220 degrees C).

  3. Fit pie crust into a 9-inch pie dish and place it on a baking sheet.

  4. Combine pumpkin puree, condensed milk, eggs, and pumpkin pie spice in a large bowl; mix until combined.

  5. Pour mixture into the pie crust.

  6. Bake in the preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and continue to bake until filling is set, 35 to 40 minutes.

  7. Remove from the oven, set on a wire rack, and cool completely before serving.

  8. Enjoy!
